Grilled Stuffed Squid

best paired with some beer, great as appetizer and as main dish too! grilled stuffed squid INGREDIENTS : For Squid Marinade (adjust according to preference)

1/2kg large squid (large enough that you can put some stuffing)

1/2 lemon, juiced

1 tsp oyster sauce

1/4 cup low sodium soy sauce

1 tbsp sugar

1 tbsp oil

For Stuffing (adjust according to preference)

1/2 small cabbage, shredded

1 small carrot, cut into matchsticks size

1/4 cup ground pork (beef or chicken) – optional, but recommended

3 cloves garlic, minced

1 small onion, chopped

oil for sauteing

salt and pepper to taste

PROCEDURE : Prepare the Squid

Clean the squid, remove everything from the inside and as much as possible keep the head intact.

In a container with lid, combine all the ingredients for the marinade and add the squid, making sure that all the squid is soaked into the marinade. Let sit in fridge for few hours or preferably overnight.

Prepare the Stuffing

In a pan over medium heat, heat the oil, cook the ground meat until browned. Add in onions, cook until fragrant and add in garlic, mix and cook until fragrant. Add carrots then cabbage, season with salt and pepper, cover and let simmer until the cabbage is fully cooked. Strain into a bowl to remove any liquid from the stuffing.

To assemble

Preheat the grill or grill pan. For grill pan, make sure that you brush the pan with a little oil to prevent the squid from sticking.

Stuff each squid with the stuffing, make sure that you don’t over stuff the inside as the stuffing might comeout during grilling.

On Grilling

Grill the stuffed squid while brushing the squid with the marinade from time to time. On half-way through grilling make some slit on the squid to release some moisture.

Grilling time will depend on how you like the doneness of your squid.
