Fried Chicken Steak with Creamy Mushroom Sauce

Chicken Marinade

  • 500g Chicken Breasts, thinly sliced (steak size)
  • 1 cup buttermilk or laban
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper

Chicken Breading

  • 1 cup beef stock (chicken or pork)
  • 1 cup flour
  • 1 egg
  • salt and pepper to taste
  • fine bread crumbs
  • panko bread crumbs

Mushroom Sauce

  • 2 cups beef stock (chicken or pork)
  • 4 to 5 tbsp cream cheese
  • 1 1/2 tbsp flour
  • 2 tbsp butter
  • 1 to 2 pcs beef ham, finely chopped
  • 1/2 cup mushrooms, finely chopped
  • 1 tbsp onion, finely minced
  • 1 tbsp garlic, finely minced
  • salt and pepper to taste

Prepare the Chicken

  1. In a container, combine all the ingredients for the marinade and let sit in the fridge overnight.

Prepare the Sauce

  1. In a small bowl, combine beef stock, cream cheese and flour until the cheese and flour has dissolved. Set aside.
  2. Preheat pan in medium heat, fry ham, add butter. When butter is completely melted, add mushroom then garlic. Pour the stock, and stir until the sauce thickens and boil. Season as needed. Set aside.

Deep fry the Chicken Steak

Preheat the pan with oil for pan frying.

Prepare 3 shallow pans.

Pan #1 – Combine, beef stock, egg and flour. Whisk until well combined.
Pan #2 – Combine the fine and panko bread crumbs, start with 1:1 ratio.
Pan #3 – This is where you’ll put the breaded chicken steak

Work with this way, dip the steak in Pan #1, then dredge in Pan #2 – make sure that you press lightly the breading so it will stick to the chicken. Transfer breaded steaks in Pan #3. Repeat the process until all the steaks are breaded.

Deep fry the steaks until golden.

Just before serving, you may drizzle the top of with mushroom sauce. This can be paired with rice, pasta, mashed potato or just as it is. πŸ™‚

  • To save time, prepare the sauce a day before.
  • You can use your favorite fried chicken, fried pork chops will be great too with this sauce.
  • You can also use any chicken parts you prefer.
  • You can cut the breast to different shapes (before marinating) and you’ll have your very own homemade chicken nuggets!
  • It’s up to you how cheesy/creamy you want your sauce to be so please adjust accordingly.
  • If using bouillon for stock, always read the package instructions before using and adjust accordingly.
  • It’s optional to use both type of bread crumbs, you can use either one of the two mentioned above.
  • In case of leftovers, use the sauce in pasta and the chicken as sandwich.
  • NO BUTTERMILK? make your own, for every 1 cup of whole milk, add 1 tsp vinegar and let sit for 5 minutes, before use.
