Ube Halaya

This time we’ll be using ube powder.

So thankful I found (by far) the best brand.

INGREDIENTS

  • 1  cup ube powder
  • 3 (13 oz.) big cans evaporated milk plus 1 (7 oz.) small can evaporated milk
  • 1 (13 oz.) big can condensed milk
  • 1 cup sugar
  • 1/2 tsp lime zest
  • 1/4 cup margarine
  • ube essence (optional)
  • 1/8 cup glutinous rice flour (optional)

PROCEDURE

  1. In a wok or a like, combine all the ingredients except the essence. Stir until well combined.
  2. Turn heat on medium and keep on stirring  until you reach the consistency you like (from spreadable to a fudge like), keep scraping the bottom as you stir to prevent burnt layer.
  3. As soon as the mixture thickens, add the ube essence according to your preference, mix and turn off heat once done.
  4. Transfer to greased containers and set aside to cool completely before refrigerating.

NOTES

Of all the ube powder brands I tried, CHEMFREE is the best brand, it has the natural ube taste I am looking for because it’s made of real dried ube. And by the way, this is not a paid advertisement, I am just so happy I found them and I just want to share this with you, you know, ube powder nowadays can be really pricey and tricky.

To my fellow OFWs who love ube and doesn’t have an access to a good ube in a place you’re in, I suggest that you include this to your list of stuff you’ll bring from your next vacation in the Philippines.
