This dish reminds me of my father, but he prepares this dish using pork. He loves to cook and experiment too and this is one of his specialties. I think this is what I inherit from him, the passion for cooking. Being the eldest I grew up assisting him in the kitchen as he cook, most of the time he will ask me to do the cutting and handing to him the next ingredient he’ll use 😉

I fell in love with this dish the first time I taste it in a restaurant years ago, but unfortunately, I was not able to go back there and didn’t even remember the dish’s name. All I know is, the name of the restaurant (Cookbook Kitchen) and its creamy, buttery, cheesy, with some herbs baked fish fillet.
This dish is one of the staple dishes in our household. You can do this with chicken or pork too or even with any fish you prefer (just read the notes below).
And by the way, I strongly recommend that you don’t skip the pineapple part, when you try it, you’ll know what I’m talking about and you’ll never skip that part again 😉
This dish is similar to sweet and sour, the only difference is that, the taste of the ginger is more defined.
